Recipe Exchange: Beef and Noodle Soup

It’s time for the Old Fashioned Recipe Exchange again and today I’m sharing a recipe I developed after reading over and over again about the Amish making Beef and Noodle Soup. This is NOT that, but it started with that idea. So simple, yet I didn’t delve into beef soup for a LONG time. Now it’s become a favorite around here.

As a side note, sharing these recipes every week has been a good way for this “fly by the seat of her pants”  cook to actually measure things, and have written recipes. When my Sweetie and I first married, he was afraid that if I came up with a winner, I wouldn’t be able to repeat it. It has meant that dishes are not ALWAYS exactly the same every time, but we’re both usually happy with the finished products!

So, here’s my…

Beef and Noodle Soup recipe:

  • ⅓ pound Ground Beef
  • 2 cups each, Chopped Broccoli And Carrots (or Any Veggie You Like)
  • 8 cups Beef Broth
  • 1 teaspoon Italian Seasoning, Dill (or Whatever Flavor You Like )
  • 1 pinch Parsley
  • 10 ounce box Pasta

**Pour the broth into a large pot and heat on med-high. Meanwhile, chop your veggies, then brown the meat and drain. When the broth is boiling, toss everything in, stir and lower heat to med-low. Let it simmer for about 15 minutes, turn off heat and serve.

Comforting and yummy!
