Recipe Exchange: Bruschetta

It’s time for the Old Fashioned Recipe Exchange with Little House on the Prairie, and today I’m sharing what I made for an event at my husband’s work. Bruschetta with Tomato and Mozzerella. I’m not sure that it’s technically Bruschetta. but I didn’t know what else to call it. This is simple, yummy and easy to take to a party or potluck!

Just a few simple ingredients and you’re ready to go:

12 oz Garlic “chips” from Ralph’s

An 8 oz  Mozzerella ball from the nicer cheese section, thinly sliced and halved, since the “chips” are small.

3 Roma tomatoes, thinly sliced

20-25 Spinach leaves

Some olive oil

Salt and pepper

Lay out the “chips” and brush each one with the olive oil. Start layering, mozerella, spinach and tomato, until each “chip” is loaded. Sprinkle with a bit of salt and pepper and serve. Enjoy!

I forgot to photograph the spinach, but you all know what it looks like. And these are actually my scraps above. :>
